Carrot
Cake with Cream Cheese Icing

from Avon cookbook from 1980. Our family’s favorite carrot cake recipe

cup sugar
2
cups flour
2
teaspoons baking soda
1
teaspoon salt
3
teaspoons cinnamon
1
½ cups vegetable oil
4
eggs
3
cups grated carrots
1
cup chopped nuts (optional)
1
teaspoon vanilla
Sift together sugar, flour, soda, salt and cinnamon. Stir in oil. Add eggs, one at a time, mixing well after each addition. Add carrots, nuts and vanilla, mixing thoroughly. Pour into a floured and greased 13 x 9 x 2-inch cake pan. Bake in a 350 degree oven for 30 minutes. Cool in pan. Spread with cream cheese icing.
