Meat
in Tomato Sauce
If
you are ever in a hurry and have left over meat, you can make this in a jiffy.
Mia Tia Elvira makes this with left over pork ribs and it tastes great.
But remember you have to always add less or more to your taste.
Left
over meat cut in small pieces
1
large tomato
1
medium onion
cut
up cilantro – if is up to you how much you want to add
1
jalapeno pepper or you can use piquin chiles also.

cloves garlic or garlic powder
some
black pepper corns or powder
some
cumin seeds or powder
salt
to taste
you
can add:
fresh
oregano if cooking left over pork
In
the molcaquete muele your whole spices add tomato & chiles and make a paste.
Add water to the paste sufficient water to make your sauce.
In skillet add oil when hot add meat, mixing until meat is hot, add your
sauce, salt, cilantro & onions. Cook
until sauce is done or onions are tender. You
can add more water if needed while cooking.
If using powder spices grate your tomato & chiles and add the spices to your taste then add water.
